So here are just a few things that may be helpful in mastery of the animals.

1. Use the Buildings to accelerate Harvesting, thus mastery.  Aka Dairy Farm Stuffing, Stable Stuffing.
2. Use the Duck Pond to Harvest the Ugly Duckling
3. The Red Pinto Foal is the only foal that can be mastered, this is because its listed as a Colt in the gamecode.
4. Not really helpful in mastering, but all the Level shares that go to your Facebook, are Bottles.  So those may be of help to your friends.
5. The Animal mastery Pages in the game show ALL animals, including expired and Unreleased.
6. The Animals from Halloween 2010 and the 2010 Fair that were sold for full price and half price, if you have a regular and a sale animal you can get 2 signs it appears.
7. If you do not have room for the mastery signs, you can store them or delete them.
